MITZIES ALMOND vegetarian QUENELLER (forced vegetarian meatballs)

This recipe yields about 40 queneller
...and takes about 30 minutes to prepare!

3/4 C. finely chopped/ground almonds
3/4 C. grated cheddar cheese
3/4 C.bread crumbs
2 tbsp. chives
1 tsp. salt
pinch of black pepper
3 eggs
2 tbsp. water

Mix all of the above ingredients and make small balls: using about one heaping tsp. of mixture for each one.

Then...using
1 qt. vegetable bouillon
2-3 tbsp. of butter or cooking oil

Boil one quart of vegetable bouillon and let the small balls simmer for about 6-7 minutes. Strain the cooked balls and fry them in butter or cooking oil for about 2-3 minutes.

Serve with a mixed sallad and mashed potatoes. This is really good with an added touch of cranberry sauce!

Hmmm, these sound pretty good. I am not a big meat fan so would not even miss it.
