Sloppy Beef Burgers


Ingredients:

1 1/2 pounds lean ground beef
1/2 cup chopped onion
1/3 cup chopped green bell pepper
1 (10 3/4 ounces) can reduced-fat, reduced sodium condensed tomato soup
1 tablespoon Worcestershire sauce
1 tablespoon prepared mustard
Dill pickle slices (optional)
8 whole-wheat or white hamburger buns, split and toasted

Directions:

COOK beef, onion and bell pepper in large skillet over medium-high heat until beef is no longer pink; drain. Stir in soup, Worcestershire sauce and mustard. Bring to a boil; reduce heat. Cover and cook for 5 minutes.

SPOON beef mixture over bottoms of buns; top with pickles and tops of buns.

Grandmas Sweet Cornbread


1/2 cup butter
2/3 cup white sugar (This is a really sweet cornbread)
2 eggs
1 cup buttermilk (Cultured butter milk is a must use, don't try to use anything else)
1/2 teaspoon baking soda
1 cup cornmeal
1 cup all-purpose flour
1/2 teaspoon salt

Directions

1. Preheat oven to 375 degrees F (175 degrees C). Grease an 8 inch square pan.
2. Melt butter in large skillet. Remove from heat and stir in sugar. Quickly add eggs and beat until well blended. Combine buttermilk with baking soda and stir into mixture in pan. Stir in cornmeal, flour, and salt until well blended and few lumps remain. Pour batter into the prepared pan.
3. Bake in the preheated oven for 30 to 40 minutes, or until a toothpick inserted in the center comes out clean.

BREAKFAST CUPCAKES

This is a really easy dish to prepare, and it looks so darn cute! It is also a great dish to serve on a buffet table because each serving is completely self-contained and can just be picked up and popped on a plate.

1 20 ounce package pre-shredded hash brown-style potatoes
2 large eggs, lightly beaten
4 tablespoons flour
1 small sweet onion, coarsely grated
2 thick slices deli ham, chopped into small bits (about 1 cup)
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
Salt and freshly ground black pepper to taste
1 dozen eggs, scrambled
chives or other garnish

Preheat the oven to 400 degrees F., and lightly spray a 12-cup muffin tin with non-stick cooking spray. Mix the first eight ingredients together in a large bowl. Spoon potato mixture into each prepared muffin cup until about 1/3 full. Gently press the potato mixture down in the middle and up the sides of each cup. Bake until golden brown, about 25-30 minutes. If the nests have puffed up too much in the center, scoop out a little with a teaspoon. Spoon a few tablespoons of scramble eggs into each nest and top with chives.

cheesy pepperoni twist Now this one can be with as much or as little cheese and pepperoni as you want , its up to you, as long as the dough is covered its fine

Ingredients:
Frozen bread dough
Pepperoni
Mozzarella cheese
Parmesan cheese
Olive oil
Italian seasoning
1/4 cup tomato sauce (Optional)
8 slices bacon
1 small to medium onion if desired diced finely

Directions:
Loosely cover the frozen bread dough with plastic wrap. Allow the dough to thaw for a few hours at room temperature. When the dough is completely thawed it will be slightly puffed up.
Here's a tip: Spray the plastic wrap with cooking oil, or brush it with cooking oil and lay it, oiled side down on the bread dough. This allows the bread dough to rise and move easily under the plastic wrap without it sticking or holding back the dough.

Roll dough out to an approximately 11 x 11 inch square. One frozen dough log makes one pepperoni roll.

Brush dough with olive oil or whatever cooking oil you prefer. Lay pepperoni on the dough covering entire surface. Sprinkle with shredded mozzarella cheese.

Next, sprinkle it with shredded Parmesan cheese and lightly sprinkle it with Italian seasoning. Add a sprinkling of garlic salt (optional).and add crumbled bacon and finely diced onion if so desired.

Roll up the dough starting at one edge of the square.
Place rolls on baking sheet, leaving space between them if you are making more than one roll. Brush some melted butter on top of the uncooked pepperoni roll(s).

Bake at 375 degrees F for approximately 15 to 25 minutes. Oven temperatures and times may vary. When done, the top of the rolls should be golden brown and you should be able to make a tapping sound on the crust with your fingernail (the same as when baking bread).

Make sure you allow your pepperoni roll to cool completely before slicing and serving it.

Bacon Wrapped, Cream Cheese Stuffed Chicken Breasts: SHARE SO THIS SAVES TO YOUR TIMELINE!!!

1 boneless skinless chicken breast
2 tablespoons cream cheese
1 tablespoon green onion, Chopped
2 pieces bacon, Partially Cooked

Directions:

Pound out Chicken breast so it is about 1/4" thick.

Mix together cream cheese and green onions and spread cheese mixture over 1 side of chicken breast.

Roll CHicken breast up to conseal cream cheese.

Wrap partially cooked bacon around chicken breast and secure with toothpick.

Plase on baking sheet and back for about 30 minutes at 375.

Broil for about 5 minute to crisp bacon.

you can sub turkey bacon for the bacon, and a low fat cream cheese to make this healthier !!

Makes 4 servings

Prep Time: 20 min.

Ingredients:

8 slices dark rye bread
16 teaspoons Russian or Thousand Island dressing
8 ounces corned beef
4 ounces Sauerkraut, well drained
4 ounces Swiss cheese (1 or 2 slices each sandwich)
4 pats butter


Cooking Directions:

SPREAD the dressing on each bread slice.
ON one slice, place the corned beef, then the sauerkraut, and then the
cheese.
PLACE the second slice on the top with the dressing side down.
BUTTER the top of the sandwich and place buttered side down on a
preheated griddle.
NOW butter the other side of the sandwich, which is the top side.
HEAT the sandwich until bread is golden brown.
TURN once and allow the other side to become golden brown.
CUT the sandwich in half and serve.

Cheesy Ham Biscuit Pull Aparts

1 (16.3 oz) Pillsbury Grands Flaky Layers Biscuits (I used the buttery flavor).

1 egg
2 tablespoons milk
3/4 cup diced ham
1/4 cup thinly sliced green onion
1/2 cup shredded cheddar
1/2 cup Monterey Jack cheese
1/2 teaspoon granulated garlic

Heat oven to 350 degrees. Spray a 11 x 7 or 12 x 8 glass baking dish with cooking spray. In a large bowl, beat egg and milk with a wire whisk until smooth.

Separate dough into individual biscuits and cut each biscuit into quarters. Gently stir biscuit pieces into egg mixture to coat evenly. Fold in ham, cheese, onions and granulated garlic. Spoon mixture into prepared dish, arrange biscuit pieces in a single layer.

Baked at 350 for 23 - 25 minutes or until golden brown. You can either cut into squares or just pull apart and serve.

Chickpea Pita Burgers

Ingredients:

1 can (15 1/2 oz.) chickpeas, rinsed
4 green onions, trimmed and sliced
1 egg
2 Tbsp. all purpose flour
1 tsp. oregano
1/2 tsp. ground cumin
1/4 tsp. salt
2 Tbsp. extra virgin olive oil
2 pita rounds (6 to 7 inch), split and halved

Directions:

Pulse the chickpeas, scallions, egg, flour, oregano, cumin, and 1/4 teaspoon salt in a food processor just until a coarse mixture forms and then form into 4 patties.

Heat the oil in a large skillet over medium high heat, add the patties, cook until golden, about 4 to 5 minutes, then turn and continue to cook until golden brown, about 2 to 4 minutes.

Spread condiments of choice inside pita halves and add your choice of veggies such as onions, tomatoes, sprouts, lettuce, etc. along with a patty inside each pita and serve.

STUFFED ITALIAN BREAD

1 Italian loaf, about 12 inches long
1 stick butter, melted
1/8 cup olive oil
3 tsp minced onion
2-3 cloves garlic, grated
1 tbsp dijon mustard
1 tbsp poppy seeds
3 tsp chopped parsley (add more if you wish)
12 oz grated cheese
(I used a mix of white cheddar and monterey jack.)

Preheat the oven to 350 F.

Mix the melted butter, olive oil, onion, garlic, dijon mustard, poppy seeds and parsley in a bowl.

Cut the bread into cubes with X slices without cutting all the way through the bottom crust.

Pour the butter-onion garlic mixture carefully into those X cracks using a small spoon and over the top of the bread. Fill those delicious cracks with the grated cheese.
(It seems like a lot of work and trouble but it's all worth it. Yes.)

Wrap the entire loaf with foil, sealing the sides properly and bake for 15-20 minutes. Remove from the oven and unwrap. Bake for another 10 minutes until the cheese is melted and gooey.

Grilled Ham and Tomato Sandwiches


Ingredients:

1/2 cup Major Grey's chutney
8 thin slices (6 ounces) French bread
1 small tomato, sliced
8 thin slices (6 ounces) cooked ham
4 thin slices (2 ounces) cheddar cheese
Butter-flavored nonstick cooking spray

Directions:

SPREAD chutney evenly over slices of bread. Top each of 4 bread slices evenly with tomato, 2 slices ham and 1 slice cheese. Top with remaining bread slices, chutney-side-down. Generously spray both sides of sandwiches with nonstick cooking spray.

GRILL sandwiches in large, nonstick skillet over medium heat for about 3 minutes on each side or until golden brown. Cut in half.

1 medium onion, cut lengthwise in half, then cut crosswise into thin slices
1 can (15 oz) Progresso® black beans, drained, rinsed
4 cups fresh spinach leaves
1/2 cup shredded reduced-fat Cheddar cheese (2 oz)




Directions

Step1
Heat tortillas as directed on package.
Step2
Meanwhile, spray 10-inch skillet with cooking spray; heat over medium heat. Cook mushrooms and onion in skillet about 4 minutes, stirring frequently, until onion is crisp-tender. Stir in beans; heat through. Stir in spinach; remove from heat.
Step3
Divide bean mixture among tortillas. Sprinkle with cheese. Fold one end of each tortilla up about 1 inch over filling; fold right and left sides over folded end, overlapping. Fold remaining end down.

BLT Wrap


What You Need

1 flour tortilla (6 inch)
1 Tbsp. KRAFT Real Mayo Mayonnaise
1/4 cup chopped lettuce
1/4 cup chopped tomato
2 cooked slices OSCAR MAYER Bacon, crumbled

Make It

SPREAD tortilla with mayo; top remaining ingredients.
ROLL up and serve. Or, roll up, wrap tightly in plastic wrap and refrigerate until ready to serve
