Broccoli with Toasted Sesame Seeds

2 pounds broccoli
One quarter cup butter
1 Tbsp. soy sauce
2 tsp. sesame oil
1 clove garlic, minced
2 Tbsp. sesame seeds
Salt and pepper to taste

Cut broccoli florets into bite-sized pieces. Cut off the bottom inch of the stems, the peel the stems and cut into thin slices. Blanch broccoli by placing in a saucepan and covering it with water. Bring water to a boil and cook for just a couple of minutes until broccoli is crisp tender. Drain off water and add butter, soy sauce, sesame oil and garlic to the saucepan and cook for several more minutes. Add toasted sesame seeds and salt and pepper. You may toast the sesame seeds by placing them on a baking sheet and placing them in the oven on 400 degrees for several minutes until they turn golden brown.

The Skinny: Use low sodium soy sauce.

I will have to give this recipe to my son's girlfriend, she loves broccoli and even eats it raw...yuck

WHOLE MEAL CHICKEN SALAD

2 to 3 cups chicken breast, cooked
1 (15 oz.) can chunk pineapple, drained
1 (11 oz.) can mandarin orange sections, drained
1/2 c. sliced pitted ripe olives
1/2 c. chopped sweet green pepper
2 tbsp. grated onion
1 c. chopped celery
1 c. mayonnaise
1 tbsp. prepared mustard
1 (5 oz.) can chow mein noodles
Chopped pecans, optional

Simmer (don't boil) boneless, skinless chicken breast in a little
chicken broth or water for 20 minutes or until chicken is cooked and
tender. Alternatively, leftover chicken may be put to good use in this
dish.

In a large bowl combine chicken, pineapple, celery, oranges, olives,
bell pepper, and onion. Blend mayonnaise and mustard. Toss gently with
chicken. Cover and chill for several hours.

Just prior to serving, stir in chow mein noodles.

Arrange salad on a lettuce-lined salad plate.

Serve with crackers or crust bread.

Sombrero Pasta Salad

16 oz. pkg. spiral pasta (rotini)
1 lb. ground beef
3/4 cup water
1 envelope taco seasoning
2 cups shredded cheddar cheese
1 large green pepper, chopped
1 medium onion, chopped
1 medium tomato, chopped
2 (2-1/4 oz.) cans sliced ripe olives, drained
16 oz. bottle Catalina or Western salad dressing

Cook pasta according to package directions. Meanwhile, in a skillet,
cook beef over medium heat until no longer pink; drain. Add water and
taco seasoning; simmer, uncovered, for 15 minutes. Rinse pasta in cold
water and drain; place in a large bowl. Add beef mixture, cheese,
green pepper, onion, tomato, and olives; mix well. Add the dressing
and toss to coat. Cover and refrigerate for at least 1 hour.

TORTELLINI SALAD

any kind of tortellini
1/2 cucumber
2-3 green onions
about 8-10 slices of ham
1/2 cup sour cream
1/2 cup Miracle Whip
salt and pepper
minced fresh garlic, to taste

Cook the tortellini according to package directions. Slice peeled
cucumbers into bite size pieces. Mix together all other ingredients and
season to taste. Enjoy.

Taco Dip

This is a deliciously quick and easy dip to prepare. Serve with
plenty of dippers such as assorted chips or some crisp fresh vegetables
cut into strips.

Ingredients

1 packet (1 ounce or so) of taco seasoning mix
1½ cups of sour cream
1½ cups of mayonnaise

'Cooking Instructions'

First put the mayonnaise and the sour cream followed by the taco
seasoning into a bowl. Now simply mix until the ingredients are well
blended. Chill before serving.

Festive Spinach Queso Dip

Ingredients

1/2 pound hot pepper jack cheese, cubed
1 pound Monterey Jack cheese, cubed
10 ounces frozen spinach, drained well and chopped
2 ounces pimento peppers, drained
1 medium onion, chopped and sauteed
1 cup milk
1/2 teaspoon garlic powder
1/8 teaspoon salt
1/2 teaspoon pepper
1 cup Daisy Brand Sour Cream
Directions

Mix all of the ingredients, except for the sour cream, in a large bowl. Microwave on low heat, stirring often until the cheese melts and the mixture is smooth. 7-10 minutes before serving, stir in the sour cream.

Labell's homemade beef Jerky

<DIR><DIR>3 Pounds Beef Roast, Lean, sliced 1/8" thick
2/3 Cup Worcestershire Sauce
2/3 Cup Soy Sauce
1 Tablespoon Salt
1/3 Cup Brown Sugar
1 Teaspoon Black Pepper
1 Teaspoon Garlic Powder
1 Teaspoon Onion Powder
3 Tablespoons Liquid Barbecue Smoke®
1/4 Cup Dark Corn Syrup

Combine marinade ingredients. Slice beef with grain. Combine and marinate overnight in the rifrigerator. Cover bottom of oven with foil to catch drip. Stretch meat on baking racks and dry in oven at lowest setting. This will take 2 1/2 to 8 hours. Crack open the oven door on occasion to allow moisture to escape. Turn all pieces over at least once, and switch top to bottom racks as the ones on the bottom will be wetter, as the top ones have dripped onto them. Meat is done when it no longer bends and you can break off a piece with ease. Do not overdry or it will be crisp and break. Do not worry about color changes as it will get lighter as it continues to dry over time.ENJOY

Bean Salad


1 can each of Kidney Beans, Green Beans and Yellow Beans
1 cup of chopped celery
1/2 cup chopped green pepper
1/2 cup chopped Spanish onion (the purple ones)
1/4 cup sugar
1/4 cup oil
1 tsp. Salt
Drain beans. Fold all ingredients together and chill several hours.
Drain again before serving.

PAM’S POTATO SALAD

1 kg tiny potatoes boiled until just cooked
Combine with chopped spring onions, celery and 3 roughly chopped hard boiled eggs add coleslaw dressing.

I don't like just eating it by itself, but I don't mine it mixed it with other stuff, makes it nice and crunchy, yeah it is nice I make this one quite often in the summer, it beats the old fashioned potato salad having to cut them into small cubes, you could shove something else in its place like red or green pepper.
Do you like mushrooms Judy I have the best mushroom salad recipe? Would have to type it out though cos I haven't got it on my computer.

i made a potato salad the other day and experimented and added cheddar cheese and broccoli to it! yumm :)

White Bean & Tuna Salad

Makes 3 servings
Prep Time: 10 min.

Ingredients:

2 - Tablespoon lemon juice
1 - Tablespoon olive oil
1/4 - teaspoon salt
1/2 - teaspoon freshly ground pepper
1/2 - teaspoon dried oregano
1 can (20-ounces) cannellini beans (rinsed & drained)
1 - can (6-2/3-ounces solid white tuna in spring water (drained and
flaked)
4 - green onions (thinly sliced)
2 - Tablespoons fresh parsley (chopped)
Lettuce leaves.


Directions:

In a medium bowl, stir together lemon juice, olive oil, salt, pepper,
and oregano.
Add the beans, tuna, and green onions.
Toss gently to coat.
Sprinkle with parsley and serve of a bed of lettuce.
