Star Cake




Watermelon is sure to be the star attraction for dessert when you serve our "no cake mix required" luscious watermelon Star Cake! What a healthy treat that will earn you sweet raves!

Preparation Time: 15 min

What You'll Need

1 oblong seedless watermelon
Whipped cream
Blueberries
Strawberries
Confectioners' sugar

What To Do:

Wash watermelon and pat dry. Cut a 3-inch slice from center of watermelon, reserving rest of watermelon for another use. Place slice flat on a cutting board and use an over-sized star-shaped cookie cutter (or sharp kitchen knife) to cut a star shape. Set on paper towel to drain excess water, then place on a serving dish.
Pipe whipped cream between bottom edge of star and plate. Dot with blueberries.
Frost top with whipped cream and arrange blueberries and cut strawberries on top. Sprinkle with confectioners' sugar and serve.

Diabetic Whipped Cream/Cool Whip Replacement

1/3 c. instant nonfat dry milk
1/3 c. ice water
1/2 tsp. sweetener

Chill small glass bowl and beaters. Combine ingredients and whip on high speed with mixer until consistency of whipped cream. Makes about 10 servings of 2 tablespoons

Mint Chocolate Chip Meringues


Ingredients

3 egg whites

¼ tsp. cream of tartar

Pinch of salt

¾ cup sugar

3 Tbsp. unsweetened or Dutch process cocoa

1/3 cup mini chocolate chips

¾ tsp. peppermint extract

5 very finely crushed sugar-free peppermint candies

Directions

Preheat the oven to 250ºF.

Cover a baking sheet with parchment paper.

Beat the egg whites, cream of tartar, and salt with an electric mixer on high until foamy.

Combine the sugar and cocoa. Gradually add the cocoa mixture to the egg whites, and beat until stiff peaks form. Gently fold in the chocolate chips, peppermint extract, and crushed candies.

Spoon the mixture into a pastry bag fitted with a ½-inch round tip.

Pipe 30 cookies, ¼ inch apart, on the prepared baking sheet.

Bake the cookies for 1½ hours. Turn the oven off, and let the cookies cool in the oven for 1 hour. Store in a tightly sealed container.

Enchilada Stuffed Mushrooms
yield: 20-24 MUSHROOMS

INGREDIENTS:

20-24 baby bella mushrooms
6 oz. softened cream cheese
1/4 cup grated parmigianno regianno cheese
1 teaspoon taco seasoning
1 green onion, sliced {white and green parts}
1 cup grated cheddar cheese, divided
salt & pepper, to taste
1 cup red enchilada sauce
any desired toppings: sour cream, salsa, cilantro, etc.

DIRECTIONS:

Preheat oven to 375 degrees. Lightly grease baking dish with non stick cooking spray and set aside.

Remove stems from mushrooms and wipe caps with damp cloth to remove any dirt. Place into baking dish.

In a small bowl, stir cream cheese to soften. Pour in parmesan cheese, taco seasoning, green onion, 3/4 cup cheddar cheese, salt and pepper. Spoon filling into cleaned mushrooms. Pour enchilada sauce over top. Sprinkle with remaining 1/4 cup cheddar cheese. Bake 20 minutes until browned and bubbly. Serve hot.

Diabetic Easter Fudge -

Yield: 8 Servings
Measure Ingredient
1 Sq unsweetened chocolate
1/4 cup Evaporated milk
1/2 teaspoon Vanilla
1 teaspoon Artificial liquid sweetener
1 pack Vanilla or chocolate artificially sweetened pudding powder (or 8
tsp. finely chopped Nuts)

1. Melt chocolate in top of double boiler over boiling water. Add
evaporated milk and mix. Cook 2-3 minutes, then add vanilla and
sweetener.
2. Spread on small foil pie pan or plate. Chill. Cut into 8 pieces. Form
into egg shaped balls and then roll lightly in pudding powder or chopped
nuts.
Will evaporated milk not heighten the sugar level and thereafter the diabetic situation of the patient?

Is this watermelon good for diabetic patients? I heard it helps in reduction of high blood pressure but I do not know how true this assertion is.

Thanks for this. This is a must trial for me but where can one get these mushrooms?

Diabetic Candy Bars

Out Of Bounds Candy Bars
Makes: 8 candy bars

Measure Ingredient
1 1/4 cup unsweetened coconut
1/2 cup milk
2 tsp unflavored gelatin
1 tsp cornstarch
1 tsp vanilla extract
1 recipe semisweet dipping chocolate

1. Combine 1/4 c of the coconut, the milk, gelatin and cornstarch in
blender; blend until smooth.
2. Pour into small saucepan, cook and stir over medium heat until
slightly thickened. Remove from heat and stir vanilla and remaining
coconut.
3. Form into 8 bars, allow to firm cool completely. Dip in chocolate.

Food Exchange per serving: 2/3 FULL-FAT MILK + 1 FAT EXCHANGE; CAL: 133
per bar.
This might be for very young persons. It is not good for ages from 40 years because of the fat-rich ingredients

One would have love it most if samples of these mushrooms, green onions etc were posted for us to see as I have not sighted them.

I tried to lure my wife into reading this with a view to asking her to learn how to prepare this but she said many of these ingredients cannot be found around us like the cocoa, cream of tartar etc.
