New Years Punch

Ingredients
1 can (46 ounces) pineapple juice
4 cups brewed tea
3 cups apple juice
1/2 cup lemon juice
2 cups ginger ale

Directions

In a gallon container, combine pineapple juice, teas, apple juice and lemon juice; mix well. Store in refrigerator. Add the ginger ale just before serving. Yield: about 30 servings.

Cranberry Cheesecake

1 cup sugar
2 tablespoons cornstarch
1 cup cranberry juice
1-1/2 cups fresh or frozen cranberries

CRUST:

1 cup graham cracker crumbs (about 16 squares)
3 tablespoons sugar
3 tablespoons butter, melted

FILLING:

4 packages (8 ounces each) cream cheese, softened
1 cup sugar
3 tablespoons all-purpose flour
4 eggs, lightly beaten
1 cup eggnog
1 tablespoon vanilla extract

Directions

In a large saucepan, combine sugar and cornstarch. Stir in cranberry juice until smooth. Add cranberries. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Remove from the heat; set aside.
In a small bowl, combine cracker crumbs and sugar; stir in butter. Press onto the bottom of a greased 9-in. springform pan. Place pan on a baking sheet. Bake at 325° for 10 minutes. Cool on a wire rack.
In a large bowl, beat cream cheese and sugar until smooth. Add flour and beat well. Add eggs, beat on low just until combined. Add eggnog and vanilla; beat just until blended. Pour two-thirds of the filling over crust. Top with half of the cranberry mixture (cover and refrigerate remaining cranberry mixture). Carefully spoon remaining filling on top. Return pan to baking sheet.
Bake at 325° for 60-70 minutes or until center is almost set. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Refrigerate overnight. Remove sides of pan. Spoon remaining cranberry mixture over cheesecake. Refrigerate leftovers. Yield: 12 servings.

Amaretto Surprise

1 package ladyfinger cookies
1/2 cup amaretto liqueur - divided use
2 (8-ounce) packages cream cheese, softened
2 large eggs
1/2 cup granulated sugar
1/4 cup amaretto liqueur
3 (10-ounce) packages frozen strawberries, thawed and drained
1 cup whipping cream


In the bottom of a glass serving bowl, place 1 layer of ladyfinger
cookies, filling in any holes with broken cookies. Sprinkle with half of
the amaretto liqueur.

Combine cream cheese, eggs, sugar and remaining half of amaretto
liqueur; mix until smooth. Pour over ladyfinger cookies.

Arrange strawberries over cream cheese mixture. Beat cream until fluffy
and spoon on strawberries. Refrigerate for 2 hours before serving.

Makes 8 servings.

Glazed Meatballs

1-1/2 lbs. ground beef
1/2 cup dry bread crumbs
1/2 cup minced onion
1/4 cup milk, optional
1 egg
1 Tbs. parsley
1/2 tsp. salt
1/8 tsp. pepper
1/2 tsp. Worcestershire sauce
1/4 cup shortening
12 oz. jar chili sauce
10 oz. grape jelly

Mix beef, crumbs, onion, milk, egg, and next 4 seasonings. Shape into
1” balls. Melt shortening in skillet and brown meatballs. Remove
meatballs from skillet; drain off fat. Chill (optional). Heat chili
sauce and jelly until jelly is melted, stirring constantly. Add
meatballs and stir until coated. Simmer 30 minutes. Serve hot in
chafing dish. Put toothpicks in some meatballs and around dish.

*can be put in crock pot rather than simmered..

Jackmo's Meat Balls

1 jar chili sauce
1/2 of a 32-oz. jar grape jelly
1/2 bottle ketchup (size?)
1 lb. ground beef
2 Tbs. garlic powder (or to taste)
1 tsp. paprika

Cook meatballs in oven at 200 for 1 hour or until golden brown on
outside and a little pink on inside. Put jelly, chili and ketchup in
a saucepan and cook on low until jelly is melted. After everything is
cooked, combine all ingredients in a pan or skillet adding garlic and
paprika last. Cook until flavor meatballs absorb flavor and sauce is
thick.
