Crunchy-Topped Broccoli Casserole

Ingredients

1 bag (24 oz) Green Giant® frozen broccoli & three cheese sauce
1/4 cup coarsely chopped drained roasted red bell peppers (from a jar)
3/4 cup Fiber One® original bran cereal
2 tablespoons grated Parmesan cheese
1/2 teaspoon Italian seasoning
1 tablespoon olive oil



Directions

Step1

Heat oven to 350°F. In ungreased 8-inch square microwavable dish or 2-quart microwavable casserole, place broccoli & cheese sauce. Microwave on High 7 to 8 minutes or until cheese is melted and mixture is very hot; stir well. Stir in roasted peppers.

Step2

Place cereal in resealable food-storage plastic bag; seal bag and slightly crush with rolling pin or meat mallet (or slightly crush in food processor). In small bowl, mix cereal and remaining ingredients until blended. Sprinkle over broccoli mixture in casserole.

Step3

Bake 20 to 25 minutes or until broccoli is crisp-tender and topping is crisp.

Crispy Baked Asparagus Fries - sooooo deeeeelish the kids will eat it too!



Ingredients:
1 pound asparagus, trimmed
1/2 cup flour
2 eggs, lightly beaten
3/4 cup panko breadcrumbs
1/4 cup grated parmesan
salt and pepper to taste

Directions:
Dredge the asparagus in the flour, dip them in the egg and then into a mixture of the panko breadcrumbs, parmesan, salt and pepper.
Place the asparagus on a wire rack on a baking sheet and bake in a preheated 425 oven until golden brown, about 7-13 minutes.

One way to get the kids and wife to eat super greens is to grill 'em! I put kale on the grill with a little olive oil and salt and it comes out like a veggie potato-chip. You can also make a grilled Caesar salad. Grilling up greens rules! :)

LOW FAT BLUEBERRY MUFFINS

1 1/2 cups wheat bran

1 cup nonfat milk

1/2 cup unsweetened applesauce

1 egg

2/3 cup brown sugar

1/2 teaspoon vanilla extract

1/2 cup all-purpose flour

1/2 cup whole wheat flour

1 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon salt

1 cup blueberries




Directions

Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or use paper muffin liners. Mix together wheat bran and milk, and let stand for 10 minutes.
In a large bowl, mix together applesauce, egg, brown sugar, and vanilla. Beat in bran mixture. Sift together all-purpose flour, whole wheat flour, baking soda, baking powder, and salt. Stir into bran mixture until just blended. Fold in blueberries. Scoop into muffin cups.
Bake in preheated oven for 15 to 20 minutes, or until tops spring back when lightly tapped.

MELT IN YOUR MOUTH CHICKEN

And it's Healthy...So much better than fried!!!

1/2 cup parmesan cheese
1 cup Greek yogurt -plain
1 tsp garlic powder
1 1/2 tsp seasoning salt
1/2 tsp pepper

Spread mixture over chicken breasts, bake at 375 degrees for 45 mins--Absolutely Delish!

ZUCCHINI BROWNIES

Brownies made with zucchini, bananas and applesauce, yielding a brownie with only 120 calories, 2 grams of fat, and a whole bunch of vitamins and minerals, and egg free. YESSSS!!!!

These are even a very moist low fat chocolate brownie alternative, for weight watchers, only 2 ww points per serving ( 24 servings). Its not going to be the same box brownie, but especially someone that only eats sweets occasionally like me, this healthier option is delish and guilt free!!


Ingredients
1/2 cup applesauce
2 small or medium bananas mashed
1 1/2 cup sugar
2 tsp. vanilla extract
1/2 cup cocoa powder
1 1/2 tsp. baking soda
1/2 tsp salt
2 cups finely shredded zucchini
2 cups all purpose flour
1/2 cup walnut pieces

Directions:
Preheat oven to 350 degrees F. Grease and flour an 9x13 inch baking pan. In a large bowl, mix together the applesauce, mashed bananas and sugar. Add vanilla and cocoa and mix together. Then add baking soda, salt, and zucchini and mix together. Add flour and walnuts and mix together. Spread evenly into a prepared pan. Bake for 25 minutes until brownies spring back when gently touched.

TACO DIP

Ingredients:
4 cups shredded lettuce
3 medium ripe avocados mashed and mixed with 2 tbsp lemon juice
1 1/2 cup Greek yogurt mixed with 1 package low-sodium taco seasoning mix
1 can black beans
3 medium diced tomatoes
2 cans sliced olives
8 oz 2% cheddar cheese

Directions:
Starting with the lettuce on the bottom of a bowl, add each layer on top of the next, ending with sprinkling the cheese on top. Alternate one celery stick with each whole grain chip to cut your calories in half.

BANANA BREAD

Banana Bread with honey and applesauce instead of sugar & oil. Delicious & Healthy.
Ingredients

2 cups whole wheat flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup sugar free applesauce
3/4 cup honey
2 eggs, beaten
3 mashed overripe bananas
Directions

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
In a large bowl, combine flour, baking soda and salt. In a separate bowl, mix together applesauce and honey. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack. —

GUILT FREE COOKIE DOUGH



1 tbsp all natural peanut butter
1-2 tsp stevia (or any sweetener!)
1 tbsp mini dark chocolate chips
¼ teaspoon vanilla extract
1 single serving plain Greek Yogurt
Directions:
Mix it all together and enjoy!! To make more like ice cream freeze for at least 30min.

ENERGY BITES

So healthy!! And SO easy! And SO yummy!

1 cup (dry) oatmeal
1/2 cup chocolate chips
1/2 cup peanut butter
1/2 cup ground flaxseed
1/3 cup honey
1 tsp. vanilla

Mix ingredients together in a large bowl. Roll into bite size balls. Refrigerate to set. Enjoy!!

Just recently I discovered that I have gone veg. I didn't even really notice it until a few days ago... seems like I have been eating fruit, wheat and vegetables for months. The best thing about it is that it happened totally naturally for me without even realizing :p

Coconut Cream Pie

  • Crust:
  • 1 (10-inch) Piercrust of 1/2 (15-ounce) package refrigerated pie dough (such as Pillsbury)
  • Filling:
  • 1/4 cup all-purpose flour $
  • 1/2 cup sugar $
  • 1/8 teaspoon salt
  • 2 large eggs $
  • 3/4 cup 2% reduced-fat milk $
  • 3/4 cup light coconut milk $
  • 1/4 teaspoon coconut extract
  • 1/4 teaspoon vanilla extract
  • Meringue:
  • 3 large egg whites $
  • 2/3 cup sugar $
  • 1/4 cup water
  • 1 tablespoon flaked sweetened coconut, toasted
Preparation


  1. Prepare and bake Piecrust in a 10-inch deep-dish pie plate. Cool completely on a wire rack.
  2. To prepare filling, lightly spoon flour into a dry measuring cup; level with a knife. Combine flour, 1/2 cup sugar, salt, and eggs in a large bowl; stir well with a whisk.
  3. Heat milk and coconut milk over medium-high heat in a small, heavy saucepan to 180° or until tiny bubbles form around edge (do not boil). Gradually add hot milk mixture to sugar mixture, stirring constantly with a whisk. Place mixture in pan; cook over medium heat until thick and bubbly (about 10 minutes), stirring constantly.
  4. Remove from heat. Spoon custard into a bowl; place bowl in a large ice-filled bowl for 10 minutes or until custard comes to room temperature, stirring occasionally. Remove bowl from ice. Stir in extracts; spoon mixture into prepared crust. Cover and chill 8 hours or until firm.
  5. Preheat broiler.
  6. To prepare meringue, place egg whites in a large bowl; beat with a mixer at high speed until soft peaks form. Combine 2/3 cup sugar and water in a saucepan; bring to a boil. Cook, without stirring, until candy thermometer registers 238°. Pour hot sugar syrup in a thin stream over egg whites, beating at high speed until stiff peaks form.
  7. Spread meringue over chilled pie, and sprinkle with coconut. Broil for 1 minute or until meringue is lightly browned; cool 5 minutes on a wire rack. Serve immediately.
